INGREDIENTS:

10 dove breasts
Season salt
2 celery stalks, chopped
1 yellow onion, chopped
Juice from 1 lemon
Pepper
1 lb. mushrooms, chopped
4 T. butter
½ cup white wine
1-2 boxes wild rice

DIRECTIONS

Cook rice as directed.
Skin dove breasts and squeeze lemon juice over them to lightly cover the breasts. Then sprinkle season salt and pepper over dove. Saute’ mushrooms, celery, and onion in butter for 3-5 minutes. Remove the mushroom mixture from the skillet. Sauté’ doves in white wine until done. Add mushroom mixture into cooked dove breasts. When mixed thoroughly, pour over wild rice. Saute’ carrots and use with parsley to garnish.
