DOVE WITH ROASTED VEGETABLES
1 red bell pepper
2 broccoli crowns
2 yellow squash
1 bag small potatoes
24 dove breasts
Prepare vegetables and place in a Ziploc bag, add olive oil, fresh garlic, rosemary or any of your other favorite spices. Shake well and place on a cookie sheet. Bake at 400 degrees for 25 minutes.
Sauté the dove breasts in a small amount of olive oil until brown. Season to taste.
Serve with roasted vegetables. Can be mixed together or served separately. Also, excellent served on a bed of wild rice with the vegetables.
